New Whs 2011 Build And Install

I have been searching for a few weeks now and havnt got any viable answers from reading so I registered to ask a few questions.

I would like to build a home server and have a copy of WHS 2011 and I also downloaded the Essentials 2012 Beta to try.

Hardware Specs
1. Motherboard: ASRock Z77 Professional
2. CPU : Intel Core i5-3450S
3. Memory :G.SKILL Ripjaws Series 16GB (4 x 4GB) 240-Pin DDR3 SDRAM DDR3 1066

The motherboard is UEFI and I would like to run it in this config as a start.
1. 1 Western Digital 320gb HDD as only a boot drive.
2. 2 Western Digital 3tb HDD as primary storage drives
3. 2 Western Digital 3tb HDD as Backups for the primary drives.

I have 3 laptops, a gaming desktop, an HTPC, and 2 Xbox 360's (all PC's run win 7 (gaming and HTPC ultimate 64), plus 3 WP7 phones. I would primarily like it to be for centralised storage and media streaming.

Is this a viable setup and if so how would remote acess for media streaming to the WP7 phones be affected. the streaming is very important as I will be adding 2 surface tablets at Xmas.

I ask this because Ive read about the 3tb issue, but have read nothing on if you want to have a primary boot drive and use them for storage only.
