Microsoft seems to document this being possible. Not only that its possible but that the behavior is that the VM's will be saved and when the Host comes out of sleep they will be restored. However when i turned on Hyper-V role i lose the option to sleep. When i remove the role i get the option to sleep back.

My goal is to be able to run a Windows 8.1 VM and a Ubuntu VM but only when i need them, its more important the server sleeps when not in use then running VM's to seldom use. Everything i find using Google-fu seems to indicate that:
-The documentation is incorrect
- A registry edit can be used to prevent the service from starting automatically (less then ideal)
- Installing third party graphics drivers will allow this
I have 2012 Essentials R2, i believe i have the Intel drivers installed for the graphics, not the generic or windows drivers (ill double check later). Currently my server does sleep and i use lights out to sleep/wake it. My main rig is Windows 8.1 and while i may consider just running the VM's there it would nice to not have to fire up my gaming rig to play in VM's. I have a surface pro 2 that i could remote into the VM's from if they ran on the server.
Any help would be great, any other information i can provide if needed. Thanks
