Banging My Head. Any Ideas?

I re-installed WHS 2011 this past weekend and I'm looking for a better way to back-up my storage.  Up until this point, I've used WHS built-in back-up feature.  I want a way to have everything working with redundancy and have a raid 1 mirror of a 2TB hard drive to back up to a disk that I can keep off site at my In-Laws safe with family videos and family pics.  i would back up all clients and the ystem OS using the built in windows backup to external usb disk using the dashboard.

I don't want to buy any more hard drives at the moment.

This is what I have for storage now:

260GB 2.5" for OS and I have a back up 260 GB disk too.

3 1TB disks, was going to take one and put in the HTPC for extra ceton recording space.

5 2TB Hard drives....5900 RPM

1 3TB Hard drive ......intellispeed (5900rpm)

1 320GB Hard Drive

These are the options I am considering.  What do you think I should pick?

1.  Build a NAS with extra memory, processors, and 4 1 TB Hard drives using FreeNas or another NAS that would have ISCSI for easy transfer through the network

2. FlexRaid?

3.  Buy a Buffalo LInkstation 2 Bay and Stablebit Drivepool

4.  Stablebit Drivepool....seems to be very successful based on the reading the forums exhaustively.

5.  IOCELL 2 bay NDS with Stablebit Drivepool
