Moving Date From Failed Whs V1 System To Whs 2011

Hi

I messed up my WHS v1 system and as it all needs reinstalling I have decided to jump to WHS 2011.

I have ordered a crucial m4 128gig SSD for the system drive and 2 x 3tb WD green drives, along with a copy of WHS 2011.

How should I go about moving all the data from the WHS v1 to the new drives, bearing in mind I used to use folder duplication and that the WHS v1 system is buggered, in that I can't open the console?

I run an email server and I plan on putting the mail store on the data partition of the system drive, for the low latency.  Any ideas on the best way to keep this backed up?

I have the safe server module (icydock raid 3.5in enclosure for 2 x 2.5in drives), would the best way be, if money was no object,  buy a second SSD and RAID 1 the system drive?
