UPDATE: Apparently my wife is right and I'm an idiot. Turns out that after the console pop up message on my laptop telling me for months that drive #3 was failing - it actually was even though both the front panel LED and the console showed it was 'healthy'. That will teach me to believe those.
The drive suddenly showed as 'missing' on the storage status on the console last night (front panel LED stayed blue though) and I removed it through the console and replaced it with a spare. Everything has been rock stable and server status is "healthy".

I have an Acer H340 running WHS v1. About a year ago, the system disk failed, I replaced it and restored.
Almost immediately I started getting file conflicts that wandered from share to share. Installed Conflict Resolver add-on, but the server was also disappearing from the network and that caused CR not to finish scans (and failed backups).
Like others here, sometimes I would get 5 minutes of access before I had to reboot the server.
And drive volume xxxxx failed messages when the drive hadn't failed (front panel LED blue).
I was going to use the batch file from another thread here to chkdsk all volumes, but then...
Sometimes I would reboot the server, get a Console that says "healthy" - but the H340 front panel server status LED is red, have continuous access to all shares, but no Console or remote desktop access / connection to the server (until I restarted). That's what I've had since yesterday.
