Looking for advice on the easiest way to create an offsite backup all of my server shares as well as data from 2 PC clients. I am using an HP EX495 server running WHSv1 with a single 1.5TB internal drive than has less than 500G total data. I want to backup my data to an encrypted external drive that I can take offsite. I think the encryption is making this harder than it would be otherwise, but necessary for offsite backups.
To date, I've added the un-encrypted external drive to the server and backed up the server shares to it, removed it, and then created a TrueCrypt volume on the drive and manually moved the shares into the encrypted volume. Takes forever...
I haven't backed up the clients yet. I am not sure if I should bother with the server, or do a manual copy from each PC. I was leaning towards opening the backup from the server and then manually moving those files to the TrueCrypt volume. I suspect that the WHS backup would be a better restore than a manual backup from the PC unless I want to shell out extra money to buy something like Acronis.
Eventually I would like to rotate 2 separate drives offsite monthly, but this is such a pain, that I might be satisfied with once a quarter. There has to be an easier way, right? Any suggestions on the best way to do this?
